Caribbean Style Yuca

Yuca with a mouthwatering bite of garlic and lime.

Ingredients

  • 18 oz Yuca, frozen
  • 1/4 tsp salt
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp fresh lime juice

Instructions

  1. Bring enough water to cover the yuca to a boil and add salt. Add the frozen yuca to the boiling water and cook on medium-low heat for 30 minutes, or until the yuca is tender.
  2. While the yuca is cooking, cook the olive oil, onion, garlic, and lime juice over medium heat 5 minutes in another small skillet.
  3. Drain the yuca and remove the hard core from the center of the yuca pieces. Place in serving bowl. Pour the seasoned oil over the yuca and serve.
Yield: 3-4 servings
Prep Time: 00 hrs. 05 mins.
Cook time: 00 hrs. 30 mins.
Total time: 35 mins.

Island Cooking

I have been eating Caribbean food most of my life. We lived in Puerto Rico when I was a child, and my babysitter would cook for us. My college roommate was Cuban, and my father had several caregivers from Jamaica. I was lucky enough to sample some of their cooking. The food from this region is a party in one's mouth. Every bite is full of flavor.
